Christmas Cacao Recipe

Give your favourite chocolate drink that festive feeling with Old Faithful's Christmas Cacao Recipe. It's simple, tasty and will help get you into the festive spirit :-)

If you are use to making a homemade chocolate drink from cacao paste or cacao powder, you are already half way there. You can add the festive ingredients to your everyday cup of chocolate or ceremonial cacao experience.

What you will need - one serving

  • Cacao paste or Cacao powder - between 20-45 grammes of paste. Or 10-20g of powder. Or a mix of 20-30g paste and 5-10g powder.
  • 250g of your favourite plant milk, mixed with water (or not) for your desired consistency.
  • Cinnamon - a dash of powder or stick of bark
  • Vanilla  - a small capful
  • Cloves - 2
  • Cardamon (green) - 2 (optional)
  • Orange - zest a little to taste
  • Ginger (grated) - little finger nail size
  • Star Anise - 2
  • Natural Sweetener to taste - agave, honey or maple syrup

How to make your Christmas Cacao

  • Measure you cacao and place in saucepan.
  • Add your cooking liquor (milk/water).
  • Add your flavourings and sweetener.
  • Gently warm on a low to medium flame stirring regularly (do not boil).
  • When you cacao paste chunks have melted and you have reached your desired temperature, remove from heat.
  • Pass through sieve or just remove the chunky ingredients.
  • Either drink as it is or give it a good whisk by hand or electric whisk to create a light frothy texture.
  • Pour and enjoy!

Notes

  • If you are using cacao paste, depending on the thickness of the milk you are using, you may need to add water to thin out the consistency. This is because the paste has a high proportion of cacao butter present which will thicken the end product.
  • Be playful and experimental with all the ingredients to find the best ratio of consistency and flavour for you.
  • Cinnamon - you can either add a dash of powder or add a stick of bark and remove at the end.
  • Cardamon - either pop two whole green cardamon into the mixture to warm or remove the seeds of one cardamon and add around 4 or 5 of these.
